Here is a step-by-step recipe for Chole Bhature, a popular North Indian dish:
Ingredients:
For the chole:
- 2 cups chickpeas (chole)
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- Salt, to taste
- 2 tablespoons oil
- Water, as needed
- Coriander leaves, for garnish
For the bhature:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup yogurt
- Water, as needed
- Oil, for frying
Instructions:
- To make the chole, soak the chickpeas overnight in enough water. Drain the water and rinse the chickpeas.
- Heat oil in a pressure cooker or a heavy bottom pan. Add cumin seeds and sautΓ© until they start to sizzle.
- Add onions, green chilies, ginger paste, and garlic paste. SautΓ© until the onions are translucent.
- Add tomato puree, coriander powder, garam masala, turmeric powder, and salt. Cook for 5-6 minutes.
- Add chickpeas to the pan and mix well. Add enough water to cover the chickpeas. Close the pressure cooker or cover the pan and cook for 20-25 minutes, or until the chickpeas are cooked through.
- Once the chole is cooked, garnish with coriander leaves and keep it aside.
- To make the bhature, mix all-purpose flour, baking powder, salt, and sugar in a bowl.
- Add yogurt and mix well. Slowly add water and knead the dough until it is smooth and pliable. Cover the dough and let it rest for 30 minutes.
- Divide the dough into small balls and roll each ball into a flat disc. Heat oil in a pan and fry the bhature until they are golden brown on both sides.
Serve hot chole with bhature.
