Ingredients:

For the chole:

  • 2 cups chickpeas (chole)
  • 1 onion, finely chopped
  • 2 tomatoes, pureed

  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder

  • 1/2 cup yogurt
  • Water, as needed
  • Oil, for frying

Instructions:

  1. To make the chole, soak the chickpeas overnight in enough water. Drain the water and rinse the chickpeas.
  2. Heat oil in a pressure cooker or a heavy bottom pan. Add cumin seeds and sautΓ© until they start to sizzle.
  3. Add onions, green chilies, ginger paste, and garlic paste. SautΓ© until the onions are translucent.
  4. Add tomato puree, coriander powder, garam masala, turmeric powder, and salt. Cook for 5-6 minutes.
  5. Add chickpeas to the pan and mix well. Add enough water to cover the chickpeas. Close the pressure cooker or cover the pan and cook for 20-25 minutes, or until the chickpeas are cooked through.
  6. Once the chole is cooked, garnish with coriander leaves and keep it aside.
  7. To make the bhature, mix all-purpose flour, baking powder, salt, and sugar in a bowl.
  8. Add yogurt and mix well. Slowly add water and knead the dough until it is smooth and pliable. Cover the dough and let it rest for 30 minutes.
  9. Divide the dough into small balls and roll each ball into a flat disc. Heat oil in a pan and fry the bhature until they are golden brown on both sides.
